Ingredients (Serves 10–12)

Item Names Quantity
Whole Turkey 12 to 14 lbs
Olive Oil or Melted Butter ½ cup
Garlic (minced) 4 cloves
Onion (quartered) 2 medium
Lemon 1 whole (halved)
Fresh Rosemary 4 sprigs
Fresh Thyme 4 sprigs
Carrots 2 large (chopped)
Celery 2 stalks (chopped)
Salt 2 tsp (or to taste)
Black Pepper 1 tsp

Instructions

Step 1: Prepare the Turkey

Rinse the turkey thoroughly and pat it dry with paper towels.

Remove the giblets from inside the cavity.

Step 2: Season the Turkey

Mix olive oil (or melted butter) with garlic, salt, and black pepper.

Rub this mixture all over the turkey, including under the skin for extra flavor.

Step 3: Stuff the Turkey

Fill the cavity with lemon halves, onion quarters, rosemary, and thyme.

This will infuse the turkey with amazing flavors while roasting.

Step 4: Setup for Roasting

Spread chopped carrots and celery in a roasting pan to act as a natural rack.

Place the turkey on top of the vegetables.

Step 5: Roast the Turkey

Preheat oven to 325°F (160°C).

Roast the turkey for about 3.5–4 hours (20 minutes per pound).

Every 45 minutes, baste the turkey with its own juices to keep it moist.

Step 6: Rest the Turkey

Once the skin is golden brown and the internal temperature reaches 165°F (74°C), remove from the oven.

Let the turkey rest for 20 minutes before slicing.
